Chocolate Mint Oatmeal and Biscotti

A few days ago, I wanted oatmeal for breakfast, but I didn't fancy plain, nut-butter or apple ginger oatmeal and I didn't have any pumpkin puree. I went to my pantry and started looking for ideas... I saw my bucket with bottles of extracts and then I knew: chocolate mint oatmeal! I added some peppermint extract and a little cocoa to the soy milk, oatmeal and amaranth flakes, drizzled it with half a teaspoon maple syrup and (I could not resist) added some chocolate chips. It actually tasted like one of the chocolate mint cupcakes from VCTotW.


I finally made a recipe I have been eying for a long time now: the choco-cinna-nut-biscotti from Vive le Vegan. I used almond slivers for the nuts.

As you can see, they were a little dark around the edges, but YUM! They are delicious! I wonder if you can make these without the cocoa, adding a little almond extract for a more authentic biscotti...

those look TASTEEE! I have a recipe for a more "traditional" cranberry walnut biscotti on my blog if you're interested. Its a really healthy recipe which I love because it tastes delicious too! I make big batches around christmas and eat them in place of other cookies (or more often than not, in addition to other cookies!) A couple of pieces with some soy milk and coffee in the morning is also a great breakfast option.

Everything in this post looks sooo delicious! Chocolate and mint are so good together! That would be a great snacky oatmeal idea next time I have a cookie or cupcake craving. :)

The biscotti look awesome, too. I am quite surprised I still haven't made vegan biscotti, since I have an espresso drink at least once a day.
