So, for my boyfriend's father's birthday, I made a big, Dutch apple pie. I never really noticed it until I saw the picture below just now, but I should definitely work on making my lattice a little bit prettier...
That pie (as I've said before, we serve pie as cake here) wasn't enough for all the guests, so I made my favorite cake (and the one my boyfriend's mother requested): Coconut Lime! I used the recipe from Vegan Cupcakes Take over the World for Coconut Lime Cupcakes. I made a dubble batch of coconut cake batter and divided it between three cake tins. I bake them at 175 C (350 F) for about 30 minutes. I use one batch of lime frosting for the whole cake. I didn't have much time to frost it, so I kept it simple.
It was the first time ever I made a triple layer cake!
If you've never made those Coconut Lime Cupcakes (or Cake) from VCTotW before: they are absolutely delicious!
