VeganMoFo 17: Raw noodles

I saw all these great looking tofu scrambles popping up and couldn't resist anymore. Yesterday, when lunchtime came around (I don't like savory things for breakfast, so no scrambles for me in the morning) I decided to make one. Broccoli, spinach, mushrooms, onions, garlic, cherry tomatoes, rocket, garden cress and of course tofu. I used the spice mix from Yellow Rose Recipes, because I really like it and I still had a bit of that mix in a little container in my spice rack.


For a snack, I whipped up a simple orange raspberry smoothie. So good, but I don't particularly like how much dishes you create with such a simple thing - and orange juicer and a blender...


And for dinner, my first ever raw pasta. I was actually quite amazed how good it tasted. And most of all, I was amazed that my boyfriend really liked it, too.

Making those zucchini curls though... isn't as simple as it looks! I hope I can 'kidnap' my mom's mandoline this weekend, maybe then it will be easier than trying to do this with a vegetable peeler...

I got the recipe for the sauce from a Dutch (originally German) cookbook, called Rauwkost (something like 'Raw'). It's made with pine nuts, but I didn't get a nice, smooth sauce, so I threw the cherry tomatoes (which were supposed to be chopped and added to the noodles, not blended in the sauce) in the blender as well. That seemed to do the trick. I really liked the sauce, and the 'noodles' as well. Weird how zucchini's can taste so different from how I usually eat them.

That raspberry-orange smothie looks so vibrant and refreshing!
I don't really like savory things for breakfast either, but your scramble looks like the perfect lunch!
Great job on the pasta Sanja! I have yet to experiment with raw pasta, but your post has inspired me to try!
