A really quick post, because I'm tired and want to go to bed asap...I made some Peppermint Chocolate Chip ice cream. I used this recipe. I don't have peppermint-stevia, so I used peppermint extract. I halved the recipe, but it was still too much (I have a tiny ice cream maker that can't handle too much ice cream) so the other half is in my fridge.

I liked it, but I liked nut-based ice creams much better with cashews (Vegan Vice by Jeff Rogers has some excellent cashew ice cream recipes!) instead of macadamia nuts. They have a overpowering, greasy aftertaste I don't like. Ok, off to bed now!

I agree - cashews are much sweeter and milder than macadamias. Regardless, your ice cream looks great and thanks for linking to the original recipe.

Wow, that looks good. It's so hot here, even in October, that ice cream sounds perfect.
Zoey ~ yeah... I found it at an Asian store. In a can... I have never seen fresh young coconuts around here.
