VeganMoFo 11: Curried Rice 'n' Bean filled Zucchini


A really quick post today, because I want to go to bed to get enough rest for a big day tomorrow: I'm running my first race! It's only four miles (6,4 km ~ why do people run 5 or 10k's in countries where they use miles and over here, where we use kilometers, we run miles?), but I am quite nervous (even though I am running for fun; it's quite a big event in the city were I live). I hope I can find my own pace, that I won't get dehydrated (whenever I am just a tad dehydrated I run like a snail, but I don't want to drink too much either) and that my clothes won't be too hot or cold...

So I'll leave you with a not-so-great pic of Vive le Vegan's Curried Rice 'n' Bean-filled Zucchini.
I really liked the filling and I am definitely going to make it more often (with or without the zucchini).

Ok, I'm off to bed. Hopefully I can catch up with all your blogs tomorrow and show a picture of a Happy Herbivore tester: Carrot Spice Muffins.

O0o yum! That looks really good. And I can't wait to see the Carrot Spice Muffins, HH really knows her stuff when it comes to carrots in desserts =)

How exciting! Your first race!! Four miles - that's impressive, I'm in such poor shape that I would have a hard time running just one mile!
